I made natto with these colorful soybeans.
These beans are grown locally and organic. That means they contain local bacteria. Dr. Shinjiro Honma I introduced in the Ikigai Diet book says local bacteria benefit us more. In the last post, I said diverse fiber can feed diverse gut microbiomes. I also feel fiber from locally grown plants has more benefits and I think it is to do with the bacteria in the plants.
This time, I made a regular natto dish, natto with spring onions. The colors stand out more this way than the natto with minced vegetables.
