Apparently, there is a restaurant called Ikigai Udon in Texas. There is Marugame Udon in Texas, too, so I am wondering why Texas. Is it true that Texas is turning the next California? I hear many people are moving from California to Texas.

In Japan, udon is eaten more in West Japan, and Soba is eaten more in East Japan. Soba and Udon are similar in the sense that they can be used in the same dish. In other words, they are interchangeable. We have Kakesoba and Kakeudon, which are exactly the same hot noodle dishes with saba or udon. We also have Zarusoba and Zaruudon, which are cold soba and udon.

So, which is better? Which is healthier?
